Ever really wanted to bake and eat homebaking but feeling guilty about the sheer amount of butter you’ve added?! These are a great treat, not too sweet and make a lovely breakfast to keep you going. I’ve adapted a recipe I found to make them a bit more tangy and then (not so healthily) stuck icing on top to make them taste much better! Enjoy!
- 240g bran sticks (all bran style)
- 100g butter
- 200g caster sugar
- 2 ripe bananas, mashed
- 2 free-range eggs
- 1 lemon juice
- 450ml milk
- 300g plain flour
- 2½ tsp baking powder
- ½ tsp salt
- 220g raisins
- 2/3 teaspoons of all spice mix
- 2 oranges peeled
- juice of one orange
Icing
- 225g full fat soft cheese
- 65g unsalted butter, at room temperature
- 400g icing sugar, sifted
- 1 tsp vanilla essence
- Preheat the oven to 190C/375F.
- Pour half of the bran sticks into a large mixing bowl. Pour over 200ml/7fl oz boiling water. Set aside until the bran sticks have softened and absorbed most of the water and the water has cooled.
- In a separate mixing bowl, cream together the butter and sugar. Add portions of the mashed banana and beaten egg a little at a time, beating well after each addition, until the mixture is smooth and well combined.
- Mix together the lemon juice and milk, then add the mixture to the muffin batter a little at a time, beating after each addition, until all of the liquid has been incorporated into the batter.
- Add the cooled, softened bran mixture to the batter and stir well to combine. (the mixture will look as if it has curdled, but don’t worry.)
- Sift the flour and baking powder and all spice into the batter mixture and stir until combined.
- Grate the orange peel into the mixture and add the orange juice
- Add the salt, then stir in the raisins or sultanas and the remaining bran sticks until well combined.
- Cook for about 20-30 minutes in muffin tins
Icing
- Cream the cheese and the butter together until smooth.
- Add the icing sugar and vanilla essence, and beat until smooth.
- Wait for the muffins to cool and dip them into the mixture or smooth on top. Enjoy!
